Menu Monday: Chocolate Zucchini bread

In case you'll be looking to get rid of some extra zucchini in the next few months ...

1 1/2 cups all-purpose flour

1 cup sugar

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 teaspoon baking powder

1/8 cup baking cocoa

2 eggs, beaten

1 cup grated zucchini

1/2 cup vegetable oil

3/4 cup chopped pecans

1/2 teaspoon vanilla extract

1 tablespoon water (if needed)

1.Preheat oven to 325 degrees.

2.In a large bowl, mix together flour, sugar, baking soda, cinnamon, salt, baking powder, and cocoa. In another bowl, combine remaining ingredients, except water.. Stir zucchini mixture into flour mixture.

About the water: The first time I made this, I found that there wasn't enough liquid to absorb all of the dry ingredients. So I added the tablespoon of water, a little at a time, until I got a thick, but workable batter.

3.Grease and flour a 9- x 5-inch loaf pan; pour mixture into pan.

4. Bake 60 to 70 minutes, or until wooden toothpick inserted in center comes out clean.

5.Cool 10 minutes, then remove from pan. Cool completely before slicing.
