Menu Monday: Cranberry-oatmeal pancakes

These might be more for adult tastes. The cranberry and wheat germ really stand out among the flavors.

1 cup whole wheat flour
1 cup quick oats
1/4 cup wheat germ
1/4 cup instant nonfat dry milk powder
1 tablespoon brown sugar
1 teaspoon baking soda
2 eggs
2 cups buttermilk
1/4 cup vegetable oil
1 tablespoon orange peel
11/2 cups halved fresh (or frozen) cranberries

In a large bowl, combine dry ingredients. In another bowl, beat eggs, buttermilk and oil; mix in orange peel and cranberries.
Stir into dry ingredients just until blended.
Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until second side is golden. Makes 12-15 pancakes
