Menu Monday: Ginger-Curry Chicken

My fiddle on a recipe I found:

1 tablespoon chopped ginger root
1 tablespoon lemon juice
1 teaspoon curry powder
2 cloves garlic, chopped
1/4 teaspoon salt
1/8 teaspoon cinnamon
1/8 teaspoon cayenne pepper
3-4 tablespoons water
4 boneless, skinless chicken breasts

In a small bowl, stir together ginger, lemon juice,
curry powder, garlic, salt, cinnamon, water and
cayenne.

Place chicken in a baking dish (one with cover if
possible). Pour ginger-curry mixture over chicken
(add a bit more water if you want more sauce)
Cover and bake at 350 for 45 minutes, or until
chicken is done.

Serve with rice, couscous or lentils.
