Menu Monday: Cinnamon muffins

Here's my fiddle of another recipe:

2 cups all purpose flour

1/2 cup sugar

3 tablespoon baking powder

1/2 teaspoon salt

2 teaspoons cinnamon

1 egg

1 cup sour cream (I used fat-free)

1/4 honey

Combine flour, sugar, baking powder, salt and cinnamon. in another bowl whisk the egg, sour cream and honey. Stir into the dry ingredients until everything is moistened.

Fill greased or paper lined muffin cups about 3/4 full. Bake at 400 for 15 to 18 minutes

These came out very light and spongy, though that may be the fat-free sour cream's doing. You can also adjust the cinnamon to taste.
